Dear Editor,

Sheila Lukins' latest column ("Cooking for Two," June 27, 2004) is sure to
stir-up
controversy. Many people are likely wondering how Lukins could be so
insensitive as
to include a recipe for veal in her weekly column. "Doesn't she know that
veal comes
from little baby cows?" What will likely be missing from this commentary is
how each of
these little baby cow has a mother who is also being cruelly treated.

Veal is a by-product of the dairy industry. Cows endure forced pregnancy in
order to
produce milk, but only female calves are valuable to the dairy industry.
Since male
calves cannot produce milk they are sold to make veal. As long as people eat
cheese
and drink milk there will be a surplus of male calves.

Those who are outraged by Lukins' use of veal should be equally outraged by
her use
of dairy. And those who suggest that "pink" veal is a humane option to
"white" veal are
just as insensitive to the plight of these animals as Lukins is. The truly
ethical choice is
to cut all meat and dairy from our diets.
