Apr. 5 - There's only so much frozen gefilte fish you can sell.
That was the market reality facing a pair of cardiac surgeons who found 
themselves co-owners of an Elmwood Park frozen gefilte fish factory on the brink of 
bankruptcy.
Financially speaking, Dr. Peter Praeger and Dr. Eric Somberg didn't need to 
buy Ungar's Food Products in 1994. The physicians, now both 56, had a 
successful practice at Hackensack University Medical Center performing open heart 
surgery.
But they bought the business anyway.
In the decade that followed, they created a line of heart-healthy frozen 
dishes like spinach-potato pancakes and veggie burgers called Dr. Praeger's 
Sensible Foods, quadrupled the workforce, received rave reviews from some 
prestigious food critics, and turned a profit.
So what were these heart surgeons thinking when they bought the factory? And 
more to the point, why did they do it?
