QUOTE:

Financially speaking, Dr. Peter Praeger and Dr. Eric Somberg didn't need
to buy Ungar's Food Products in 1994. The physicians, now both 56, had a
successful practice at Hackensack University Medical Center performing
open heart surgery.

But they bought the business anyway.

In the decade that followed, they created a line of heart-healthy frozen
dishes like spinach-potato pancakes and veggie burgers called Dr.
Praeger's Sensible Foods, quadrupled the workforce, received rave reviews
from some prestigious food critics, and turned a profit.

...

Praeger likes to cook and experimented with healthy -- and tasty --
low-salt, low-cholesterol recipes. Somberg knows about machines and helped
figure out what they needed to chop, blend, cook, and freeze.

They came up with the idea of a healthy frozen veggie burger and now
produce 25,000 pounds, or about 100,000 veggie burgers, a day.

Their line of about 30 frozen products is certified kosher. Some items are
vegetarian, some are fish, and some are certified vegan, which means they
have no eggs or dairy.
