The popularity of diets that stress a significant reduction in
carbohydrate intake, from the omnipresent Atkins Diet to other
lesser-known versions, have given birth to a glut of products and services
designed specifically to keep carbs out of our favorite foods.

And though there is no evidence for the long-term success of low-carb
diets and skeptics abound - an anti-Atkins backlash, headed by vegetarian
physicians, has already formed - it seems as though a new food niche has
been found.
