Take a bite of buffalo.
More and more Americans are savoring the gustatory sensations of that most 
American of meats.
Sales of bison products have been booming ever since mad-cow disease was 
discovered in a single cow in Washington State.
The mad-cow scare is rapidly becoming history, but bison sales are still on 
the upswing.
The National Bison Association reports that even before mad cow, the country 
was consuming more buffalo - steaks, burgers, sausages, jerky.
