Eating tacos is not going to be the same.
Sure, there will always be tacos de asada, or carnitas.

But soon, one of the most sought-after ingredients will no longer be
available: tripas, or tripe.

Responding to concerns about mad cow disease, the U.S. Department of
Agriculture banned in late December the sale of beef small intestines,
typically known in the Mexican community as tripas. And many people in the
Latino community are going to miss them.

People who eat infected beef can develop a degenerative and fatal
neurological disease.
