AR-News: (US-nc) Buffalo A Tasty Beef Alternative

CARY, N.C. -- With mad cow disease back in the headlines, some red meat
lovers are opting for an alternative -- one that roams on the range.

Once on the endangered species list, the flourishing bison is now one of
the most sought after entrees on the menu, at least at Dakota Grill in Cary.

"(The bison meat) comes in in the raw form and we make it into burgers,
chili, lasagna and more," the restaurant's co-owner, Mike Lucas, told NBC
17. In fact, Lucas says anything made with beef can be made with bison.
