The U.S. Department of Agriculture says Americans now eat 30 pounds of
cheese a year. That's up from just 6 pounds per person back in the
mid-1940s, when the USDA started tracking the cheese phenomenon.
So here's our question: If Americans are eating so much more cheese, how
come Wisconsin dairy farmers aren't prospering? Our bet is that the answer
has something to do with the fact that other states - such as California and
Vermont - seem to have made a far greater commitment to sustaining their
cheese-makers and marketing their cheeses.

cruelty, but where a lot of people are unkind to animals, especially in the
name of commerce, the cruelty is condoned and, once large sums of money are
