"I feel like a kid in a candy store," says Roxanne Klein, co-owner and
executive chef of Roxanne's restaurant in Larkspur, Calif. She and her
husband, Michael, prominent proponents of the "living foods movement"
(also called the "raw foods movement"), traveled a long way from their
state -- normally the one praised for "perfect produce" -- to help
dedicate the recent formal opening of the institute, a one-of-a-kind,
hand-in-hand association between farmers and culinary professionals.
